we all knew it was coming...
just a little bit more winter before the final push to spring
and by a little bit more winter I mean
rain
thunderstorm
hail
snow
90km winds
school cancelled tomorrow

Thankfully Mondays are usually pretty calm days for me, this past weekend was the Manitoba Outstanding Young Farmers weekend, which means I am still (ahem) recovering from a
I spent most of my day, unpacking bags, doing laundry and catching up on emails. Most Mondays I cook something simple. On the menu tonight is baked burritos, actually the recipe is baked veggie burritos but uh...cattle farmers.
Baked Burritos
(adapted from the MCC cook book 'simple in season' )
Meat Layer:
11/2 lbs ground beef
1tbsp chili powder
1tsp cumin
1 can black beans, drained
Rice layer:
1 onion chopped
1tsp turmeric
1 clove garlic
3/4cup rice
1 1/2 cups chicken stock (I used powder and water)
1 cup (or a lot more, whatever) cheese, shredded
Started the rice a 4:15pm after the boys got off the bus, and into their after school routine.

I had leftover rice from our curry last night so I halved the rice I made, and added the leftover rice at the end.

Bake in 350F oven for 45mins covered, take your cover off and bake for 10 more minutes.
Serve in tortilla's with toppings. Toppings from my fridge: cabbage, orange pepper, guacamole (1 avocado, mixed with salsa and lime juice), sour cream and homemade salsa. My toppings change with the season, in summer tomatoes and lettuce.

Our family's basic meal time rules:
1. no phones (unless we are waiting to hear if my father-in-law made it home in the storm)
2. no books (Reid, I am looking at you)
3. no lego
4. no guns, real or fake
5. no bombs real or farts
6. you must try everything, and if you don't like it keep your opinions to yourself
7. don't throw your beans (onions, or any other offending food) on the floor, place them gently on the side of your plate...trust me you won't accidentally eat them
8. you loose your dessert if you fall off your chair more that 3 times
most of these rules are broken every meal and enforced at least half the time

So set the table and light a candle because family dinner is always sacred, even Monday's
